BREAKFAST IN BED "BLUEBERRY PANCAKES"!!!

Happy new month everyone!!

    Welcome to the month of love and romance (giggles), Valentine is around the corner and guys, this is the time to buckle up. Why don't you make the day special for your lover, starting first with breakfast in bed lolzz. Who doesn't love to wake up to the smell of freshly made pancakes served with a glass of orange juice?


    This has to be the best blueberry pancake, I had made in a while. Trust me when I say your partner would be blooming with smiles at efforts made and most importantly, at the unique taste of these yummy, fluffy pancakes!! I have been searching for the best pancake recipe for a while now, and I am finally close to it. A pancake that's thick and fluffy, with a hint of sweetness but not so much just in case you want to drown them in any syrup of choice.......That's perfection to me!!


     Put in mind that while making pancakes, there's always that first pancake that doesn't come out well....I call it the sacrificial pancake. The sacrificial pancake either gets too crispy or it's white and raw in the middle, but don't be scared or bothered about that, as this makes you realize what's missing in your batter.... so you can add it up. I have tried making pancakes with butter but realized it changes the surface of the pancake as it dries it up. So, I made these with little droplets of vegetable oil on a non-stick pan but if you do have a non-stick spray good!! This is one of my favorite go-to recipes on a good Saturday morning because in most cases, I do have a few of the ingredients in hand. Shall we go to ingredients, directions and instructions for this delicious load of pancakes.





Yield: 4 servings

Ingredients



  • 500g of self-rising flour
  • 40g of baking powder
  • 80g of sugar
  • 1 whole egg
  • 1/2 Litre of milk
  • 1/2 Tbsp of salt
  • 1/2 Tbsp of nutmeg
  • 3 Tbsp of butter
  • a pinch of cinnamon powder
  • some clean blueberry with seeds removed
  • some raisins(a handful)
  • a banana
  • some honey(as topping)

Directions
  1. Melt the butter in a microwave for 30 seconds and set aside.
  2. In a medium size bowl, add in your dried ingredients and mix all together
  3. Now, it's time for your wet ingredients. Stir milk and eggs together and create a well in the center of the flour mixture.
  4. Now add in your wet ingredients into the well, including your melted butter.
  5. Using a wire whisk stir everything together until its combined. it should be thick and a bit lumpy but ensure there are no particles of  dry ingredients in your batter.
  6. Add in your seedless and pressed blueberries and dried raisins to your batter.
  7. On a non-stick pan add in a droplet of vegetable oil or spray with a non-stink spray.
  8. Pour or scoop in your batter onto the pan , using approximately 1/4 cup for each pancake
  9. Flip pancake over when you begin to see air bubbles or holes on the uncooked side.
  10. Cook each side for 2-4 minutes on medium heat until golden brown. Then you can serve with any fruit and syrup of choice.
